‘Macam-Macam Ada’ Ramadhan buffet features guest chefs from Thailand, Indonesia & Malacca

KUCHING, 28 February 2026: We recently had the opportunity to attend Grand Margherita Hotel’s original “Macam-Macam Ada” Ramadhan Buffet offering, which brings together culinary expertise with a special lineup of guest chefs from Thailand, Indonesia and Malacca for a month-long celebration of authentic flavours and traditional specialties. 

Grand Margherita Hotel offers a thoughtful curation of culinary offerings, with plenty of live stations to look forward to, including Sarawak Laksa, Winnie’s Char Kuey Teow, Kambing Golek, Satay and more. Served at the hotel’s charming Orchid Garden Coffee House as well as Poolside Pavilion, guests will get to enjoy a refined yet welcoming dining atmosphere.

This year’s highlights are the special dishes and the live cooking prepared by guest chefs from Thailand, Indonesia and Malacca. We were treated to some freshly fried Thai Fish Cakes and Indonesian Tauhu Egg as well as Thai Green Curry, Pad Thai, Indonesian Ayam Rica-Rica, Daging Balado. Rooted in tradition and authenticity, these dishes showcase the region’s diverse culinary offerings.

We had the pleasure of chatting with Chef Augustine Monis from Malacca, who has 30 years of experience cooking authentic traditional flavours along with his wife, Chef Shirley Tan. From Malaccan Duck Loh and Portuguese Style Grilled Fish to a trio of Salted Fish Acar, Mango Acar and Chilli Acar, his offerings highlight Malacca’s complex history and flavours.
